Chicken Marinade Method

A universal chicken marinade that works perfectly for stir-fries, fried chicken, or grilled dishes. Simple ingredients, excellent results.

Ingredients

Main

  • Chicken thighs 4 pieces (about 600-800g)

Marinade

Green onion & gingerAs needed
Cooking wine1 tbsp (~15ml)
Sugar1 tsp (~5g)
Salt1 tsp (~5g)
Light soy sauce2 tbsp (~30ml)
Oyster sauce1 tbsp (~15ml)
White pepperAs needed
Sesame oilA little
Cornstarch1 tbsp (~10g)

Instructions

1. Prepare the Chicken

Wash chicken thighs, debone if desired, and cut into bite-sized pieces (about 2-3cm).

2. Prepare Aromatics

  • Cut green onions into sections or mince
  • Slice or julienne ginger

3. Combine Marinade

Place chicken in a large bowl and add in order:

  1. Green onion & ginger
  2. Cooking wine - 1 tbsp
  3. Sugar - 1 tsp
  4. Salt - 1 tsp
  5. Light soy sauce - 2 tbsp
  6. Oyster sauce - 1 tbsp
  7. White pepper - as needed
  8. Sesame oil - a little
  9. Cornstarch - 1 tbsp

4. Mix and Massage

Use your hands to thoroughly mix and massage the marinade into the chicken pieces.

5. Rest

Cover with plastic wrap or place in a sealed bag. Marinate for at least 15 minutes. For best results, 30 minutes to 1 hour.

Tips

  • Thigh vs Breast: Thigh meat is more tender and juicy; breast meat needs longer marination
  • Deboning: Cut along the bone, use knife tip to scrape meat away
  • Quick absorption: Poke holes in the chicken with a fork to help marinade penetrate
