Honey Char Siu is all about an overnight marinade and repeated brushing with maltose syrup to build shine and sweetness.

Ingredients

Main

  • Pork belly, 1 piece

Marinade

IngredientAmount
Char siu sauce2-3 tbsp
Rose liqueurTo taste (or rose syrup + white liquor)
Minced garlicTo taste

Glaze

  • Maltose + hot water, 1:1

Instructions

1. Marinate

Coat the pork belly with char siu sauce, rose liqueur, and garlic. Marinate overnight.

2. First roast

Preheat the oven and roast for 15 minutes.

3. Brush and flip

Brush with maltose syrup, flip, and roast for another 10 minutes.

4. Final glaze

Brush again, increase oven temperature, and roast for another 10 minutes to deepen color.

Tips

  • Overnight marination gives the deepest flavor.
  • Brush twice for a glossy finish.
  • Watch the final roast to avoid burning the glaze.

Result

Glossy, sweet char siu with caramelized edges and juicy interior.
