Honey Char Siu is all about an overnight marinade and repeated brushing with maltose syrup to build shine and sweetness.

- Pork belly, 1 piece
Marinade

| Rose liqueur | To taste (or rose syrup + white liquor) |

Glaze
- Maltose + hot water, 1:1
Instructions
1. Marinate
Coat the pork belly with char siu sauce, rose liqueur, and garlic. Marinate overnight.
2. First roast
Preheat the oven and roast for 15 minutes.
3. Brush and flip
Brush with maltose syrup, flip, and roast for another 10 minutes.
4. Final glaze
Brush again, increase oven temperature, and roast for another 10 minutes to deepen color.
Tips
- Overnight marination gives the deepest flavor.
- Brush twice for a glossy finish.
- Watch the final roast to avoid burning the glaze.
