Shiitake Chicken is a classic steamed dish. Marinated chicken and mushrooms are steamed together for a clean, savory flavor and tender texture.
Ingredients

- Chicken thighs 500-600g, boneless and cut into chunks
Mushrooms
- Dried shiitake 6-8 pieces
- Fresh shiitake 4-6 pieces (optional, for lining the plate)
Marinade

Instructions
1. Soak mushrooms
Soak dried shiitake in warm water until soft. Squeeze dry and slice.
2. Marinate chicken
Mix chicken with the marinade and rest for 15-30 minutes.
3. Combine
Mix the soaked shiitake with the marinated chicken.
4. Assemble
Line the plate with fresh shiitake if using, then place the chicken on top.
5. Steam
Steam over boiling water on high heat for 15-20 minutes until cooked through.
Tips
- Use a little soaking liquid for extra aroma.
- Thigh meat stays tender compared to breast.
- Adjust time based on chunk size.
