Soybean Braised Pork Trotters are rich and comforting. Pre-soaked soybeans and blanched trotters keep the broth clean while simmering builds a silky texture.

- Pork trotters 1kg
- Dried soybeans 75g
Aromatics
- Whole garlic 3-4 heads
- Ginger 3 chunks
- Star anise 2
- Scallion
- Cooking wine

Instructions
1. Soak soybeans
Soak dried soybeans for 2-3 hours.
2. Blanch trotters
Start the trotters in cold water with scallion, ginger, and cooking wine. Bring to a boil, then rinse clean.
3. Braise
Add trotters, soybeans, garlic, ginger, and star anise to the pot. Pour in soy sauces and water. Bring to a boil, then simmer for 1 hour.
4. Reduce
Uncover and reduce slightly. Leave some broth for serving over rice.
Tips
- Soak soybeans early so they cook evenly.
- Simmer longer for extra tender trotters.
- Do not reduce completely - a little broth is the best part.
