Soybean Braised Pork Trotters are rich and comforting. Pre-soaked soybeans and blanched trotters keep the broth clean while simmering builds a silky texture.

  • Pork trotters 1kg
  • Dried soybeans 75g

Aromatics

  • Whole garlic 3-4 heads
  • Ginger 3 chunks
  • Star anise 2
  • Scallion
  • Cooking wine

Instructions

1. Soak soybeans

Soak dried soybeans for 2-3 hours.

2. Blanch trotters

Start the trotters in cold water with scallion, ginger, and cooking wine. Bring to a boil, then rinse clean.

3. Braise

Add trotters, soybeans, garlic, ginger, and star anise to the pot. Pour in soy sauces and water. Bring to a boil, then simmer for 1 hour.

4. Reduce

Uncover and reduce slightly. Leave some broth for serving over rice.

Tips

  • Soak soybeans early so they cook evenly.
  • Simmer longer for extra tender trotters.
  • Do not reduce completely - a little broth is the best part.
